Quick & Crispy Fish Sandwich

It’s fish Friday! We are always trying to think of more ways to get fish in our diet. It’s such a magical form of protein that way too many people struggle to get in our diets. With all the corona virus craziness, it’s also pretty impossible to find a lean source of protein at the grocery store.

I decided to give these Gorton’s beer battered fish fillets. Made with sustainably wild caught Alaska Pollock, 100% whole fillets, and natural omega-3's, these guys are great to have on hand everyday, but especially when resources are low.

Coated in a crispy beer batter, the fillets offer a hearty, pub-style taste. Flash frozen at the peak of freshness, there’s no sacrafice on flavor and nutrition. I made a simple tartar sauce that is easily made with things that you already have on hand and slapped some fillets on a brioche bun with some shredded iceberg. Dinner doesn’t always have to be hard to be delicious.

Tartar Sauce

1/3 cup Duke’s mayo

2 tablespoons minced sweet onion or shallot

1/4 teaspoon dried mustard powder

1 tablespoon fresh lemon juice

2 dashes Tabasco

1 tablespoon dill relish

1 tablespoon sweet relish

-whisk all ingredients to combine
