Pecan and Almond Granola

  • 4 cups oats
  • 1/2 cup raw sliced almonds
  • 1/2 cup raw chopped pecans
  • 1/2 cup unsweetened coconut flakes
  • 1/2 teaspoon cinnamon
  • 1/3 cup canola oil
  • 1/4 cup honey
  • 1/2 cup light brown sugar
  • 1 tsp vanilla
  • 1 tso soy sauce
  1. Preheat the oven to 325 degrees.  In a small sauce pan combine honey, canola, brown sugar, cinnamon, soy sauce, and vanilla.  Heat over medium heat until sugar disolves and a syrup forms.
  2. In a large mixing bowl combine oats, pecans, almonds, and coconut flakes.  Toss oat mixture with hot honey mixture carefully coating all the oats and nuts.  Lay coated oats evenly on a cookie sheet for 20 minutes or until golden brown, stiring half way through.  Store in an airtight container.  Note:  granola will not be cripsy right out of the oven, but will crisp when cooled.  You also have the option of adding 1 cup dried fruit of your choosing.
