Preheat the oven to 325 degrees. In a small sauce pan combine honey, canola, brown sugar, cinnamon, soy sauce, and vanilla. Heat over medium heat until sugar disolves and a syrup forms.
In a large mixing bowl combine oats, pecans, almonds, and coconut flakes. Toss oat mixture with hot honey mixture carefully coating all the oats and nuts. Lay coated oats evenly on a cookie sheet for 20 minutes or until golden brown, stiring half way through. Store in an airtight container. Note: granola will not be cripsy right out of the oven, but will crisp when cooled. You also have the option of adding 1 cup dried fruit of your choosing.
